Ingredients
- 1-1.5 pounds of ground beef chuck
- 1 tablespoon of Worcestershire sauce
- 4 About 4 ounces of blue cheese crumbles (Can adjust amount depending on how much cheese you like)
- 1/2- 1 pound sliced bacon (I prefer thicker sliced bacon)
- Salt
- Black pepper
- Light brown sugar
- White sugar
- Cayenne pepper
- Butter
- Olive oil
- Balsamic vinegar
- Mayo
- 2 large red onions
- Brioche buns
- Arugula greens

Step 1
Burgers- Take 1 to 1.5 pounds of ground beef chuck and mix with 1 tablespoon of Worcestershire sauce, salt and pepper to taste. Form patties with a well in the middle and press blue cheese crumbles into the center of the patty (or you can mix the crumbles throughout the entire patty if you desire). Wrap beef around cheese and pinch edges to seal. Place in refrigerator until about 10 minutes before you're ready to cook them.
Candied spicy bacon- Preheat oven to 350 degrees. Lightly grease non stick baking sheet. Combine 1 cup packed light brown sugar with 3/4 teaspoon cayenne pepper. Press 1 side of each slice of bacon into sugar mixture and lay sugar side up in a single layer on the pan. Sprinkle any remaining sugar over top of bacon. Bake for 15-20 minutes until bacon is crispy and sugar is bubbly. Move bacon to paper towel for a few seconds and then a plate. Bacon can be made hours before.
Balsamic mayo- Combing 3 tablespoons balsamic vinegar with 1/2 cup mayo and black pepper to taste. Mix together and set aside in refrigerator.
Caramelized red onions- Take two large red onions and slice. Melt 2 teaspoons of butter with olive oil over medium low heat in a saute pan. Add sliced onions and sprinkle with salt. Cook for about ten minutes stirring occasionally until onions have sweated and turned slightly light brown. Add 1 tablespoon of white sugar over onions and stir. Continue to cook while stirring occasionally until you have reached your desired level of caramelization. About 20-25 minutes.
Let burger patties come to room temperature and then cook either on the grill or in a pan until desired temperature is reached.
While the burgers are cooking slice and lightly toast your brioche buns. Also dress your arugula greens with olive oil and salt and pepper.
Once burgers are done spread mayo on bottom and top of bun, place burger on bun, top with onions, bacon, and dressed arugula salad.
