Ingredients
- 1 pound small red potatoes, quartered
- 1-1/2 cups cut fresh green beans (2-inch pieces)
- 1 medium sweet red pepper, julienned
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp minced fresh oregano
- 1 tsp minced fresh thyme
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups chopped Swiss chard

Preparation
Step 1
In a large bowl, combine the first nine ingredients. Transfer to a greased 15 x 10 pan.
Bake, uncovered, at 425 for 25 minutes, stirring once. Add Swiss chard. Bake 15-20 minutes longer or until potatoes are tender, stirring once.
You may substitute spinach for swiss chard. Bake potatoes 35 minutes. Add spinach and cook 5-10 minutes longer.
