Ingredients
- extra virgin olive oil
- 1 red onion, fine chop
- 1 medium zucchini, cut in half and thinly sliced
- 2 tsp fresh thyme
- 8 oz monkfish, cut into 1/2" cubes
- salt & pepper, to taste
- 1.5 cup basic tomato sauce
- 1 cup dry white wine
- 1 lb linguine
- italian parsley, fine chop

Preparation
Step 1
Boil water for pasta.
Heat oil in a 10-12" saute pan, and add onion, thyme and zucchini. Cook until light brown, 8-10 mins.
Season fish and add to pan. Saute for 1 minute. Add tomato sauce and wine and bring to a boil. Lower heat and simmer for 10 minutes.
Add pasta to water and cook until al dente. Drain.
Add pasta to pan and toss until well mixed. Add parsley and serve.
