Besciamella or balsamella is the Italian take on the classic bechamel sauce.

Ingredients
- 5 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 2 teaspoons salt
- 1/2 teaspoon grated nutmeg

Preparation
Step 1
In a medium saucepan, melt butter over medium heat. Add the flour and stir until smooth. Cook, stiring, until light golden brown (6-7 mins).
Meanwhile, in another medium saucepan, heat milk to just under a boil. Add the milk to the butter mixture 1 cup at a time, whisking, until very smooth, and bring to a boil, whisking. Cook, whisking, until thick (10 mins).
Remove from heat and season with salt and nutmeg. Let cool.
