ASIAN****Turkey Congee

13/10/14 - I like this very much. I like it with soy, sesame oil, sliced green onions and sliced hot chilies (hot, hot, hot). It makes a good make-ahead for lunches. I froze the leftovers, about 1 1/2 cups each, in ziplock bags.

Ingredients
- Garnishes:
- (Makes 6-8 servings)
- 1 turkey carcass, broken down into several large pieces (including wing tips and drumsticks if possible) I used thighs and wings from the grocery story which I roasted first in the oven.
- 1 (900 mL) container chicken broth
- 1 1/2 cups long grain rice, rinsed and drained (I used white basmati)
- 1 (1-inch) piece ginger, peeled
- 3/4 tsp each salt and white pepper
- 4 to 6 cups hand-torn or cut pieces of cooked leftover turkey (again, I used the meat from the thighs and wings)
- Ground white or black pepper
- Sesame oil
- Sliced green onions
- Fresh cilantro
- Sliced fresh chili peppers
- Soy sauce
- Chinese vinegar
- Pickled Chinese vegetables
- Roasted salted peanuts

Preparation
Step 1
In large pot, add turkey parts or turkey carcass and bones; cover with 8 cups of water. Bring to boil, reduce heat and simmer, covered, for 2 hours; strain.
Remove meat from bones, shred and set aside.
In same large pot, bring turkey stock, chicken broth, rice, ginger, salt and pepper to boil. Reduce heat to simmer and cover, stirring occasionally until liquid is absorbed and rice is tender and broken down, about 1 1/2 hours. (Make sure you keep an eye on the congee for the first 15 minutes because this is the time when it tends to boil over while covered).
Stir in leftover turkey and cook, uncovered, until heated through, about 5 minutes. Adjust consistency of congee with water or additional broth if necessary. Season with additional salt and pepper to taste and top with your favourite garnishes.
