Pesto Shrimp with Couscous

Ingredients
- 1/3 cup hot vegetable broth
- 1/2 cup uncooked couscous
- 1/2 cup chopped red bell peppers
- 1/2 cup slivered onion
- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/2 lb large shrimp, shelled and deveined
- 4 Tbsp sun dried tomato or basil pesto

Preparation
Step 1
Preheat oven to 425*.
Pour broth over couscous; cover and let stand 5 minutes.
Combine couscous, bell peppers, onion, oil and salt in a medium bowl; mix well.
Place couscous in the middle of two 15-inch pieces of aluminum foil. layer shrimp on top of couscous mixture; top with pesto. Fold and tightly seal the edges with narrow folds.
Place packets on baking sheet and bake 15 minutes. Remove packets from oven and transfer to individual serving plates.
