Ingredients

  • 2 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1 1/2 cups Milk
  • 2 large Eggs (Whites and Yolks Separated)
  • 1/4 cup Butter (melted)
  • 1/2 cup Strawberry Jam
  • 1 cup Sliced Strawberries (plus more)
  • 1 tablespoon Orange-Flavored Liqueur
  • Fresh Whipped Cream (To Garnish)

Preparation

Step 1

Preheat your oven to 400°F. Prepare a baking sheet by first buttering it and then lining it with a piece of parchment. Butter the parchment.
In a large mixing bowl, stir together the Flour, Sugar, Baking Powder and Salt.
In a separate bowl, whisk together the Milk, Egg Yolks, and Melted Butter. Add the wet ingredients to the dry ingredients and mix until combined.
Whisk the Egg White until stiff. Gently fold in the Egg Whites into the batter.
Pour the batter into the prepared baking sheet and smooth to an even layer. Bake for 7-8 minutes, or until well risen and springy to the touch. Be sure to not over-bake the Pancake or it will be difficult to roll.
Using an offset spatula, loosen the cake from the side of the pan. Place the baking sheet onto a cooling rack and let cool.
To make the filling, combine the Orange-Flavored Liqueur with the Strawberry Jam. Spread a very thin layer of the Jam on the Pancake and lay the Strawberries on top. Begin to roll the cake like a Jelly Roll, pulling the parchment paper away as you go.
To serve, slice into rounds and dollop with Fresh Whipped Cream and more sliced Strawberries.
