Ingredients
- 1 teaspoon olive oil
- 1 shallot, minced
- 4 ounces andouille sausage
- 2 sprigs thyme, chopped 1 sprig sage, chopped
- 1 teaspoon peppercorns
- 1 cup red wine
- 1 cup Roma tomatoes, diced 1 cup cream
- 1 teaspoon file powder
- pinch cayenne
- salt

Preparation
Step 1
In a pan over medium heat, combine oil, shallot, sausage, herbs and peppercorns. Cook, stirring, for 4 minutes. Add the wine, reduce to a simmer, and cook until reduced by half, about 10 minutes.
Skim the fat from the sauce. Continue to simmer, and add the tomatoes and cream. Bring to a low simmer, and cook 10 minutes or until slightly thickened. Season with file, cayenne and salt, and serve
