Preparation
Step 1
Preheat oven to 350°. In a small bowl, combine the apples, brown sugar, cinnamon and chile powder, and set aside. In a large bowl, using an electric mixer, beat the eggs, sugar and vanilla for 3 to 4 minutes, until fluffy. Add the oil and orange juice, and mix on medium speed for 2 minutes longer. Add the flour and baking powder a little at a time, until a smooth batter forms. Stir in the salt and cardamom seeds. Pour half of the batter into a lightly greased, 9-inch, square baking dish. Evenly layer the apple mixture over the batter, and pour the remaining batter over the apples, using a knife to spread it evenly. Bake, uncovered, for 50 to 60 minutes, until top is golden.
Meanwhile, prepare the glaze: In a howl, combine the sugar, cardamom and chile powder. Whisk 1 teaspoon of water in at a time, until a glaze consistency is reached. Once the cake is cooked, cool completely on a rack, and drizzle the glaze over the top of the cake before serving.
