1 1/2 cup granulated sugar
1 egg
1 1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
2 teaspoons cream of tartar
1 teaspoon baking soda
2 2/3 cups all purpose flour

1/3 cup granulated sugar
1 1/2 teaspoon cinnamon

Directions

Step 1
In a mixing bowl beat melted butter, pumpkin, and sugar until smooth and creamy. Add egg, vanilla, salt, cinnamon, cream of tarter, and baking soda and mix well. Gradually add in flour, mixing on low until incorporated. Stir in apples and chips.

Topping
Step 2
In a small bowl stir together sugar and cinnamon.

Step 3
Scoop heaping tablespoons of dough into the cinnamon sugar and sprinkle to coat the dough. Drop onto silicone or parchment paper lined cookie sheets and bake 8 minutes, They will appear slightly underdone but this is what you want for a soft, chewy texture. Allow to cool a few minutes before transferring to cooling racks.
