Ingredients
- 2 tablespoons butter
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 lb ground beef
- 1 tablespoon chili powder
- 1 1/2 teaspoons salt
- 1 family-sized can cream of chicken
- 1 small can chopped green chilies
- 1 dozen flour tortillas, cut in half
- 1 can enchilada sauce
- 1 (16 oz) can refried beans
- 4-6 cups cheddar cheese, shredded

Preparation
Step 1
1. Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking dish.
2. In large skillet, melt butter over medium heat. Cook onion and garlic about 5 minutes, or until tender.
3. Add ground beef, chili powder, salt and red pepper. Cook until beef is brown and crumbly; drain.
4. Stir in soup and green chiles; set aside.
5. Line prepared baking dish with tortillas.
6. In a medium bowl, whisk together one can of enchilada sauce and refried beans.
7. Spread bean mixture onto tortillas.
8. Evenly sprinkle with cheese.
9. Layer with more tortillas.
10. Cover with meat mixture.
11. Evenly sprinkle with cheese.
12. Layer remaining tortillas.
13. Repeat until dish is full, ending with bean mixture on top.
14. Sprinkle with remaining cheese.
15. Bake for 25 minutes or until hot and bubbly.
16. Serve with lots of sour cream & cornbread casserole.
