BANANA MUFFINS OR CAKE

Ingredients

• 3 c. flour
• 1 tsp. soda
• 1 tsp. cinnamon
• 1 tsp. salt
• 2 c. sugar
• 1 1/2 c. oil
• 1 c. crushed pineapple with juice
• 2 c. mashed bananas
• 1 1/2 tsp. vanilla
• 3 lg. eggs -- beaten
• 1 c. chopped nuts

Preparation

Step 1

Mix together first 5 ingredients. Add rest of ingredients. Mix well with a spoon - do not use a mixer. Bake in muffin tins at 350 degrees for 25-30 minutes. Test for doneness with a knife.

FOR CAKE: Bake in greased and floured tube pan for 1 hour and 20 minutes at 350 degrees. Test center of cake after 1 hour.
