- 3-4 loaves of dried bread
- Turkey neck & giblets if desired
- Turkey drippings
- 1/2 - 1 bunch of celery (cubed)
- 1 onion (diced)
- Sage to taste (quite a bit actually)
- Salt & pepper to taste
- 3 eggs
- 1/2 cup of milk (mix with eggs)
- Day or two before:
- Lay bread out to dry turning over occasionally.
- When dry break bread into small pieces, omit heels.

Step 1
Early in the day:
1. Boil turkey neck, giblets, celery, and onions in a pot of water for 2-3 hours to create turkey stock (may use bullion cubes or broth if making dressing for chicken).
2. Place bread crumbs into a large bowl. Pour hot turkey stock over bread and moisten well.
3. Give turkey neck to cat.
4. At this point, the stuffing should be slightly soupy. Add sage, salt, and pepper to taste.
5. Guard stuffing from Grandpa Harris (he always puts too much sage!).
6. Add drippings from turkey, saving enough drippings for your gravy. Place stuffing in a baking dish sprayed with Pam cooking spray.
7. Bake at 350 uncovered, for about an hour or until done. Top should be lightly brown with a crust. Inside should be hot, soft, and moist.
This makes enough for the whole family. Adjust for larger or smaller crowds as needed. Enjoy!!!
