Ingredients

  • 1 cup chopped quahog meats
  • 2 cloves garlic(crushed and chopped)
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 Tbls. (heaping) of ground pepper wet sauce
  • 3 Tbls. vinegar
  • 1/2 cup chopped onions
  • 1/4 cup oil
  • 1 tsp. poultry seasoning
  • 1/4 cup parsley
  • 1 cup quahog juice
  • 2 1/2 hard Vienna or Italian breads

Step 1

Wash quahogs well and place in a pan with approximately three cups water.
Cover pan and boil to steam them(the clams will open). Let cool. take the meats out of the clams. Keep the clam water. Save 1 cup of water for the sauce. Use the rest for the bread plus water. Break the empty shells into halves to fill with dressing. Chop up the clam meats(use scissors or blender or processor). Do the same for onions and garlic. In a large fry pan add oil and vinegar and all ingredients. Sauce everything then add 1 cup of clam juice, let simmer. Put out the fire while you prepare the bread. Meanwhile cut bread into pieces. Place it in a large pan add clam juice and perhaps 1 quart of luke warm water. Squeeze bread into another pan, squeeze the bread as much as you can,(I put the bread through a processing machine). If you have one use it if not, knead the bread by hand as well as you can. Now take the mixture from the frying pan. Pour it into the bread and mix well, if cool enough mix it with your hands then add about 2 Tbls. oil in fry pan and put the mixture into fry pan and fry all together until it looks a little dry. Now fill your quahog shells and place them in a cookie sheet(I place mine right on the oven rack). Preheat oven 350 degrees and bake about 45 minutes.
Option: Put the dressing in a casserole and bake.
