This is a hearty meaty chili, based on Emeril's recipe but has been modified.

Ingredients

  • 6 Strip bacon
  • 2 Tbs reserved bacon grease
  • Salt to taste
  • Cayenne to taste
  • 2 lb stew meat
  • 1 lb lean ground beef
  • 1 Tbs chili powder
  • 2 Tsp ground cumin
  • 1 tbs Crushed red pepper
  • 2 Tsp dried oregano
  • 2 Tbs chopped garlic
  • 3 Cup crushed tomatoes
  • 1/4 Cup tomato paste
  • 2 Cup beef stock (glace de viande)
  • 1 Cup canned kidney beans
  • 2 Tbs masa flour
  • 4 tbs Water
  • 2 Medium green bell pepper, diced
  • 2 Medium jalapenos or other pepper diced
  • 1 Cup red wine
  • 1 Large onion diced

Preparation

Step 1

1. Fry bacon and reserve fat for later.

2. Add onions to bacon fat (or use butter) and saute until they start to soften

3. Season with salt and cayenne to taste

4. Stir in stew meat, chili powder, cumin, crushed red pepper, and oregano

5. Brown meat for 5 to 6 min. Add cabarnet.

6. Stir in garlic, tomatoes, tomato paste, beef stock, bell pepper, jalapenos and beans.

7. Bring liquid to a boil and reduce to simmer. Let simmer 1 hour uncovered or until beef is tender. Skim off the fat occasionally.

8. Brown ground beef and add to chili. Add bacon, chopped to chili.

9. Mix masa and water. Slowly stir in the slurry and cook for additional 30 min.
