Ingredients

  • 2 1/2 cups self rising flour
  • 1 1/2 cups sugar
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup butter, melted and cooled
  • 1/4 cup passion fruit pulp
  • 2 tbsp lemon juice

Preparation

Step 1

Preheat the oven to 375F. Lightly grease a 12 hole muffin pan. Sift the flour into a bowl and stir in 1/2 cup of the sugar, Make a well in the center.

Whisk together the Buttermilk,eggs, vanilla, and 2/3 cup of the melted butter, and pour into the well. Stir until just combined.

Half fill each muffin hole with mixture, then add 1 tsp of the passion fruit pulp to each muffin and top off with the remaining mixture. Bake for 30 minutes, or until risen and springy to the touch.

Mix the lemon juice and remaining butte in a bowl, and spread the remaining sugar on a plate. Brush the warm muffins with lemon butter and poll in the sugar. Serve warm.
