Ingredients
- 1 cup egg substitute
- 3/4 cup fat-free cottage cheese
- 1/2 cup fat-free sour cream
- 2 tablespoons butter, melted (optional)
- 3/4 teaspoon salt
- 1 1/2 cups finely chopped onion
- 1 package frozen chopped broccoli (10 ounce) thawed and drained
- 1 package corn muffin mix (such as Jiffy); (8 1/2 ounce)

Preparation
Step 1
1. Heat oven to 400 degrees.
2. Combine first 5 ingredients in a large bowl. Stir in onion, broccoli and muffin mix; stir until well blended. Pour into sprayed 13x9" baking pan.
3. Bake 27 mins or until set.
Notes: Very eggy - not really a "bread"
