Moroccan Couscous & Chickpea Salad 0 Picture

Ingredients

  • 1 c couscous
  • 1/2 c dries cherries
  • 1 c boiling water
  • 5 T olive oil
  • 1 large orange bell pepper
  • 1 large onion sliced thin
  • 1 1/2 t ground cumin
  • 1/2 t ground ginger
  • 1/4 t cinnamon
  • 1/4 t black pepper
  • 1 16 oz can chick peas drained
  • 1/4 c fresh cilantro
  • 3 T rice wine vinegar
  • 3 T frozen oj concentrate

Preparation

Step 1

Place couscous & dried cherries in a bowl with boiling water. Cover with lild or plastic wrap & let sit for 5 minutes til absorbed.
Heat 2 T oil in skillet. Add peppers & onions sauteing until tender about 5 minutes. Add spices, then ass couscous & chick peas & cilantro.
Whisk 3 T oil with vinegar & oj. Pour over salad. Cover & chill.

( I like more spices & oil as it seemed to be UNspicey the 1st time I made it]
