Pecan Phyllo Sheets with Fried Apples

- 8 sheets phyllo pastry
- 1/4 cup melted butter
- 1 1/4 cups chopped pecans
- 1/4 cup soft brown sugar
- 1/4 cup plus 1 tbsp unmelted butter
- 1/2 tsp freshly grated nutmeg
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 4 small Granny Smith Apples, sliced into 1/2 inch thick slices horizontally
- 3/4 cup Neufchatel

Step 1
Preheat the oven to 400F. Brush one sheet of phyllo pastry with some of the melted butter. Top with another sheet, sprinkle with one third of the pecan and sugar, top with another layer of phyllo, brush with more melted butter, and repeat the layering and sprinkling until you have used all of the pastry, pecans, and sugar. Use scissors to cut the pastry in half, then cut each half into eight triangles. Place the triangles on two baking sheets and bake for 10 minutes, or until crisp and golden.
Heat the unmelted butter in a large skillet, add the apples and spices, and cook over medium heat for 5 minutes, turning the apples once, until they are soft and golden. Serve accompanied with the phyllo triangles and a spoonful of Neufchatel. Dust with nutmeg.
