Curried Chicken with Broccoli

Ingredients
- 6 chicken breasts - skinned & boned
- 3 packages broccoli tops
- 1 cup mayo
- 2 cans cream of chicken soup
- Grated rind of 1 lemon
- Juice from this lemon
- 1/2 teaspoon curry powder
- 1/2 cup sharp cheddar cheese - grated
- 1 cup Pepperidge Farms toasted bread crumbs
- 1/2 cups parsley - chopped

Preparation
Step 1
Steam broccoli until barely tender.
Cook chicken in seasoned simmering water until tender. Cube into bite size pieces.
Mix together mayo, soup, lemon juice & grated rind & curry powder.
Butter a 3 quart casserole dish.
Cover the bottom of dish with a layer of broccoli. Add chicken for the next layer.
Pour sauce over the casserole.
Top with mixture of grated cheese, bread crumbs & parsley.
Bake uncovered at 350 for 25-30 minutes.
