Baja Black Beans, Corn, and Rice

Ingredients
- 6 cups cooked brown rice
- 15 ozs black beans, rinsed and drained
- 15 ozs corn, drained
- 4 tomatoes, diced
- 1/2 cup red onion, chopped
- 1/2 cup chopped cilantro
- 1 jalapeno, seeded and diced
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 dashes hot sauce

Preparation
Step 1
1. Cook brown rice.
2. In a medium bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, oil, salt, pepper and hot sauce.
3. To serve, Place a scoop of hot rice in a bowl or on a plate, top with a generous scoop of the black bean mixture. Stir together before eating.
Notes: An excellent. Simple recipe but oh so delicious! Tastes like summer. Rice is warm but mixture on top is not - the raw corn is wonderful. Not sure I'd serve this with frozen or canned corn - might be good, but not the same. Some of the reviewers used canned tomatoes - wouldn't do that. Perfect recipe for using the summer produce. And the brown rice was perfect with it - white rice wouldn't have worked nearly as well.
