Pyrohy (Perogies)- Kitchen Aid

Depends how you are at the rolling and the filling and the pinching, one batch of dough could get you 17 dozen perogies. I have a note that says 3 batches of this dough with the 10 pounds of potato filling makes 35 dozen. Good luck, you get better as you go, this comes from a non-Ukie (in-laws are Ukrainian).

Ingredients
- Dough-
- 1 1/2 c. Milk (warm)
- 1 1/2 c. Water (or the potato water)
- 1 Egg
- 1/2 c. Oil
- 6 c. Flour
- 1 tbsp. Salt
- 1/8 tsp. Baking Soda
- Potato Filling-
- 3 lg Onions
- 1/2 Brick Cheddar
- 1/2 lg. jar Cheez Whiz
- 10 lbs. Red Potatoes

Preparation
Step 1
Mix all ingredients in Kitched Aid Mixer, until well mixed. Take it out, beat and fold, seperate dough into batches, cover each with a bit of oil and cover with plastic wrap and refrigerate.
Have very large pot of water at a rolling boil on stove.
Lay flour and sprinkle dough on top. Roll continually until dough is thin. Use small tin can size for perogy circles.
Once filled with potato filling and pinched, put all in boiling water, stir down to bottom to avoid sticking, don't overload. When perogies rise to the top, they can be put on cookie sheets or roasters that have oil in them. Toss them around in the oil and then have them cool.
