Ingredients

  • 2 tsp oil
  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 envelope taco seasoning mix
  • 1 14 oz can diced tomatoes
  • 1 cup grated cheddar cheese
  • 6 cups torn lettuce
  • 2 medium tomatoes - chopped
  • 1/2 cup grated cheddar
  • 2 green onions
  • 1/2 cup tortilla chips - broken

Preparation

Step 1

Heat oil in frying pan. Add ground beef and onion. Fry until browned. Drain off fat and liquid. Add taco seasoning, tomatoes with juices and first amount of cheese. Heat and stir until cheese is melted. This can be prepared ahead to this point. Reheat before serving.

Divide lettuce onto 6 plates. Scatter diced tomato over each. Spoon hot beef mixutre over the top. Sprinkle with the second amount of cheese. Scatter green onions and tortilla chips over the top.
