Ingredients

  • 1 cup marg. or 3/4 cup oil
  • 1 1/2 cup sugar
  • 4 eggs
  • 1 Tbs vanilla extract
  • 1 3/4 cup flour
  • 3/4 cup good quality cocoa
  • 1 tsp baking powder
  • 1 tsp salt
  • 12 oz chocolate covered mint patties,frozen

Preparation

Step 1

in a lg. mixing bowl,cream marg or oil and sugar until light and fluffy. Add eggs,one at a time,beating well after each addition. Beat in vanilla. Add flour ,cocoa,baking powder,and salt to creamed mixture and mix well.
Spread about 2/3 of the batter into a lined 9x13 baking pan lined with parchment paper. Arrange frozen mint patties,in rows,over top,covering the whole surface.Carefully spread remaining batter over patties. Bake at 350 for 35-40 min. or until edges begin to pull away from the sides of the pan. Top will appear uneven. Cool completely on a wire rack. Cut into bars.
They taste better serving them straight from the freezer.
