Ingredients
- 1/4 cup lemon juice
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried basil
- 1 tsp granulated sugar
- 1 tsp salt
- Fresh ground pepper
- 2 large tomatoes, chopped into large chunks
- 1 eggplant, chopped into large chunks
- 2 of: yellow, green or red pepper, chopped into large chunks
- 1 zucchini, halved and sliced I to chunks
- 1 red onion, sliced into chunks
- 1 minced garlic clove
- Fresh basil or cilantro leaves for topping, chopped if desired

Preparation
Step 1
Preheat oven to 425F.
Whisk lemon juice, oil, vinegar, basil, sugar and salt together in a bowl. Season with pepper & toss with veggies. Transfer into a large, deep baking pan.
Bake in oven for 30-40 mins until veggies are soft.
Cool and eat as a salad with crumbled feta or goat cheese with broken toasted pita pieces or chunks of day-old Italian bread. OR, toss with pasta straight out of the oven and top with Parmesan petals.
