Ingredients
- 1/4 c pumpkin puree
- 1 egg
- 1 c coconut milk ( almond or cow..your choice)*more liquid if they are too thick
- 1 c wheat flour (you can use rice or any kind you like)
- 1 Tblsp sugar ( I use Truvia)
- 2 tsp baking soda
- 1 tsp cinnamon
- pinch of nutmeg
Preparation
Step 1
whisk pumpkin and egg & then whisk in remaining ingredients until blended.
If it is too thick add more liquid
cook on a griddle top or flat pan until done. Serve with regular syrup or any topping you like best
