Pumpkin Pancakes

Ingredients

  • 1/4 c pumpkin puree
  • 1 egg
  • 1 c coconut milk ( almond or cow..your choice)*more liquid if they are too thick
  • 1 c wheat flour (you can use rice or any kind you like)
  • 1 Tblsp sugar ( I use Truvia)
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • pinch of nutmeg

Preparation

Step 1

whisk pumpkin and egg & then whisk in remaining ingredients until blended.
If it is too thick add more liquid
cook on a griddle top or flat pan until done. Serve with regular syrup or any topping you like best
