Ingredients

  • 7 cups chopped carrot
  • 2/3 cup sugar
  • 1/4 cup fat-free sour cream
  • 3 tablespoons flour
  • 2 tablespoons melted butter
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 3 eggs, lightly beaten
  • 1 teaspoon powdered sugar

Preparation

Step 1

1. Heat oven to 350.

2. Cook carrot in boiling water 15 mins or until very tender, drain. Puree until smooth.

3. Add sugar-eggs, pulse to combine. Spoon into sprayed baking dish.

4. Bake 40 mins, or until puffed adn set. sprinkle with sugar.

Notes: Very easy and fabulous tasting - does not taste low-fat!
