Ingredients

  • 1 cup lowfat vanilla yogurt
  • 1/2 cup skim milk
  • 1/2 cup oats
  • 1/2 tsp vanilla extract
  • 1/4 cup egg substitute, beaten
  • 1 large banana, mashed
  • 1/4 cup brown sugar
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 cup mini-chocolate chips
  • 1/2 tsp table salt

Preparation

Step 1

1. Preheat oven to 375ºF.

2. Combine yogurt, milk, oats, vanilla extract and egg. Set aside 5 minutes for oats to soften; stir in banana.

3. In a separate bowl, stir together brown sugar, flour, baking soda, baking powder and salt. Stir flour mixture into yogurt mixture to moisten ingredients. Do not beat. Dough will be very thick. Stir in chips.

4. Spoon batter by heaping tablespoons into 3 mini-muffin tins coated with cooking spray. Bake until golden brown, about 15 to 18 minutes.

Notes: The flavor of these was great, with my only change being to sub eggbeaters for the egg and cinnamon chips for the chocolate. However I tried to make it into a loaf, rather than muffins and it just wouldn't cook. Would have to make as muffins next time.
