Ingredients
- CRUMB TOPPING:
- DOUGH
- 2 oz yeast
- 1 cup sugar
- 10 cups flour
- 3 sticks butter
- 4 yolks
- 2 eggs
- 1 1/2 cup warm milk
- FILLING;
- 3 pkg 8 oz hard cream cheese
- 2 lbs. farmer cheese
- 5 Tbs vanilla sugar
- 1 egg
- 1 yolk
- 1 1/2 cups sugar
- 1 stick butter
- 1 cup flour
- 1 cup sugar
- 1 egg for brushing

Step 1
Place yeast,sugar and 1 cup warm water into bowl of an electric mixer. Set for 5 min until foamy. Add remaining dough ingredients,alternating wet and dry,and mix very well for at least 5 full min. Cover and let rise one hr.
Meanwhile combine ingredients for the filling using either an immersion blender or mixer.
Preheat oven to 350.Take challah from the dough without a bracha and divide into 3 or 4 parts(depending how large the pans are) Roll each piece of douh out to about 1/4 of an inch thick,and smear with filling.
Roll each piece of dough in a jellyroll fashion,rolling gently so filling doesn't come out.Bend it to fit and twist to fit into the pan.
Brush the top with beaten egg and sprinkle generously with topping. Bake for 45-50 min.
