Ingredients

  • 3/4 cup flour
  • 1/4 teaspoon baking soda
  • salt
  • 2 tablespoons sugar
  • 3/4 cup egg beaters® 99% egg substitute
  • 2 tablespoons melted butter
  • 1 1/2 cups nonfat buttermilk
  • 1 egg yolk
  • 3 cups lowfat cottage cheese
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon vanilla

Preparation

Step 1

1. Blend dry ingredients.

2. Beat eggs. Add butter and buttermilk. Add to flour.

3. Make crepes - cooking only on one side.

4. Beat egg. Add cheese, sugar, cinnamon, 3/4 tsp salt, vanilla. Spoon 2 tb filling in center of cooked side of crepe. Fold over.

5. Brown in butter or bake.
