Ingredients
- 1 1/2 cups flour
- 1 cup oats
- 3/4 cup brown sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup mashed banana
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/4 cup egg substitute
- 1/4 cup oats
- 2 tablespoons chopped walnuts
- 2 tablespoons brown sugar
- 2 teaspoons butter

Preparation
Step 1
1. Heat oven to 350.
2. Combine flour-salt, make a well in the center. Combine banana-egg, add to flour, stirring just until moist. Spoon into a sprayed 8" loaf pan.
3. Combine oats-butter, sprinkle over batter. Bake 1 hour, or until tester tests clean. Cool 5 minutes in pan on wire rack, then remove from pan and cool completely on wire rack.
Notes: Easy and delicious - nice and moist. Instead of the topping I just sprinkled some oats and turbinado sugar on top.
