Ingredients

  • 1/2 cup flax seed
  • 3 bananas, mashed
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup egg substitute
  • 1 cup whole wheat pastry flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup wheat germ
  • 1 cup blueberries

Preparation

Step 1

1. Heat oven to 350.

2. Grind 1/2 cup flax seeds adn set aside.

3. Beat together banana-eggs.

4. Combine flour-salt and fax (ground and whole). Stir into banana mixture; fold in blueberries. Spoon into sprayed loaf pan.

5. Bake 55-60 minutes, until tester tests clean.

Notes: - one of those recipes with lots of healthy ingredients that doesn't taste that way. Did make changes: used 1 cup ww pastry flour and 1/2 cup AP, eggbeaters instead of eggs, 1/4 cup wheat germ instead of the 2nd use of flaxseed, and blueberries instead of dates (frozen and tossed with flour, about 2 cups). Fabulous.
