  • 1 small zucchini, shredded
  • salt and pepper
  • onion, diced
  • bacon, crumbled
  • diced tomato
  • 7 eggs
  • oregano
  • 2 TBS butter
  • 2 sheets puff pasry
  • shredded cheese

Step 1

Cook bacon. Shred zucchini and sqeeeze out moisture. Dice onion and tomato. Melt butter and start to scramble 6 eggs. Add onion, tomato and zucchini and finish cooking eggs. Add crumbled bacon and salt and pepper. Put down flour and roll out pastry. Cut each piece in half. Brush edges with egg wash. (1 egg and water) add 1/4 of egg mixture to each pastry. seal. Brush with egg and put egg on top. Bake at 425 for 20 minutes.
