Chocolate-Caramel Macadamia Clusters

- 1 c sugar
- 1/2 c heavy whipping cream
- 1-1/3 c macadamia nuts, toasted
- 1/8 t kosher salt
- Nonstick cooking spray
- 7 oz dark chocolate, chopped

Preparation
Step 1
1. In a med saucepan, stir sugar & 1/4c water over med-high heat until sugar dissolves, about 3 min, brushing sides of pan w/a wet pastry brush to remove sugar that clings there. Boil syrup w/o stirring until it turns golden brown, about 7 minutes. Remove from heat & stir in cream. Set aside to cool for 15 min, then add nuts & salt.
2. Line 2 baking sheets w/parchment paper; spray 1 w/nonstick cooking spray. Using 2 spoons, drop 1T of caramel-nut mixture onto sprayed baking sheet, forming 20 mounds. Refrigerate until clusters are cold, about 20 min.
3. Place chocolate in a small bowl. Set bowl over a saucepan of hot water to melt chocolate, stirring occasionally. Remove bowl; let chocolate cool 5-7 min.
4. Using a fork, lift 1 cluster from baking sheet & drop it into melted chocolate. Lift cluster & place on ungreased baking sheet. Repeat w/remaining clusters. Refrigerate candies until chocolate is set. Candies can be stored in an airtight container in the refrigerator up to 2days.
