Ingredients
- 4 celery stalks, thinly sliced on bias
- 3 carrots, medium, thinly sliced on bias
- 3 c peas, fresh or thawed frozen
- 1 lemon, juice & zest
- 1/2 c EVOO
- 2 T fresh chopped dill
- Salt
- Pepper
- 1/2 c crumbled feta cheese

Preparation
Step 1
1. In a large bowl, toss together the celery, carrots, & peas.
2. In a med bowl, whisk together the lemon juice & zest, EVOO, dill, salt, & pepper to taste.
3. Pour dressing over sliced vegetables. Gently stir in feta cheese. Season w/more salt & pepper.
