Ingredients

  • 4 celery stalks, thinly sliced on bias
  • 3 carrots, medium, thinly sliced on bias
  • 3 c peas, fresh or thawed frozen
  • 1 lemon, juice & zest
  • 1/2 c EVOO
  • 2 T fresh chopped dill
  • Salt
  • Pepper
  • 1/2 c crumbled feta cheese

Preparation

Step 1

1. In a large bowl, toss together the celery, carrots, & peas.
2. In a med bowl, whisk together the lemon juice & zest, EVOO, dill, salt, & pepper to taste.
3. Pour dressing over sliced vegetables. Gently stir in feta cheese. Season w/more salt & pepper.
