Ultimate Caesar Salad with Pesto Tofu

Ingredients
- 8 ounces extra firm tofu, cut into 2x1-inch pieces and drained well
- 1 tablespoon olive oil
- 2 tablespoons bottled pesto
- 1 pkg. DOLE® All Natural Ultimate Caesar Salad Kit
- 1 cup cooked green beans, cut into 2-inch pieces
- 1/3 cup marinated sundried tomatoes, drained and cut into thin strips
- 1/3 cup pine nuts, toasted
- 1/4 cup coarsely chopped fresh basil (optional)

Preparation
Step 1
Lightly brown tofu in olive oil in medium nonstick skillet over medium-high heat 10 to 12 minutes, turning as needed to brown all sides. Remove and drain on paper towels. Toss with pesto, in bowl.
Combine all ingredients in salad kit except Caesar Dressing. Add cooled tofu, green beans, sundried tomatoes and pine nuts. Toss with dressing. Garnish with basil, if desired.
