Ingredients
- 1 1/4 cups buttermilk
- 2/3 cup oats
- 1/4 cup egg substitute, beaten lightly
- 2 tablespoons firmly packed light brown sugar
- 2/3 cup Granny Smith apple, grated and excess juice squeezed out
- 6 tablespoons all-purpose flour
- 6 tablespoons whole-wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon vegetable oil, plus additional for brushing the griddle
- maple syrup as an accompaniment

Preparation
Step 1
1. Whisk together 1 cup buttermilk and oats, let stand 15 mins.
2. Whisk together egg-apple. Stir in flours-oil, oats mixture, and remaining 1/4 cup buttermilk, combine.
3. Heat a griddle until hot enough to make drops of water scatter, brush with oil, drop batter by half-filled 1/4-cup measures. Cook 1-2 mins/side, or until golden and cooked through. Serve with syrup.
Notes: Fabulous - a new favorite - fast, hearty, healthy, filling ... absolutely delicious!
Original recipe - 2 tbsp oil and 1 egg.
