CHEWY CHOCOLATE CHIP COOKIES

- 1 1/2 cups up bleached flour
- 1/2 tsp baking soda
- Pinch of salt
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 2 tbsp sugar
- 1 egg
- 1 egg yolk
- 7 oz milk or dark chocolate, coarsely chopped

With the rack in the middle position, heat oven to 375F. Line two or three baking sheets with parchment paper.
In a bowl, combine the flour, baking soda and salt. Set aside.
In another bowl, combine the butter, brown sugar and sugar with a wooden spoon. Add the eggs and stir until smooth. Stir in the dry ingredients and the chocolate. Cover and refrigerate for at least 1 hour.
Shape the cookies with a 3 tbsp capacity ice cream scoop or spoon. Place 5 to 6 balls of dough on each sheet. Bake for 8 to 9 minutes or until lightly browned all around. They should still be very soft I. The center. Let cool completely on the baking sheet.
