BROCCOLETTE*****Pan-Roasted Broccolette with Garlic and Red Pepper Flakes

04/10/14 - This was great. I had it for lunch, topped with a fried egg, a bit of grated Parmesan and a squeeze of fresh lemon. Yummy! It should be equally good as a vegetable side dish.

Ingredients
- 1 large bunch broccolette, rinsed
- 1 tablespoon Extra virgin olive oil
- salt and freshly ground black pepper, to taste
- 1 large garlic clove, thinly sliced
- 1/4 teaspoon red pepper flakes
- 1/4 cup of chicken broth

Preparation
Step 1
In a medium (NON-STICK) sauté pan, over high heat, add 1 tablespoon of olive oil and heat until shimmering.
Carefully add the brocolette to the sauté pan and cover with a silicone lid (it spits).
Season with salt and pepper and cook, until slightly charred, approximately 2 minutes, turning once.
Add the garlic and red pepper flakes and continue to cook until fragrant, approximately 1 minute.
Add ¼ cup of broth and cover the sauté pan with a lid. Let cook, undisturbed, until the water evaporates, approximately 1 to 2 minutes.
Drizzle with a little extra virgin olive oil or fresh lemon juice and serve.
