Ingredients

  • Topper:
  • 1 * 1 eggplant, peeled and diced (~4cps)
  • 1 * 1egg slightly beated
  • 1/3 * 1/3 cup milk
  • * ½ cup chopped onion
  • 1 * 1 can cream mushroom soup
  • * ¾ cup herb stuffing
  • 1 -1 cup sharp chedder cheese
  • 1/2 -1/2 cup crushed herb stuffing
  • 2 -2 T. butter, melted

Cooking time 40mins

Preparation

Step 1

-Cook eggplant in salted water until tender, 6-7 minutes., drain.

-Mix with rest of ingredients and put in greased casserole pan.

-Mix topper ingretients and spread over eggplant mixture


Bake at 375* for 45 min. Serves 8-10
