Ingredients
- Topper:
- 1 * 1 eggplant, peeled and diced (~4cps)
- 1 * 1egg slightly beated
- 1/3 * 1/3 cup milk
- * ½ cup chopped onion
- 1 * 1 can cream mushroom soup
- * ¾ cup herb stuffing
- 1 -1 cup sharp chedder cheese
- 1/2 -1/2 cup crushed herb stuffing
- 2 -2 T. butter, melted

Cooking time 40mins
Preparation
Step 1
-Cook eggplant in salted water until tender, 6-7 minutes., drain.
-Mix with rest of ingredients and put in greased casserole pan.
-Mix topper ingretients and spread over eggplant mixture
Bake at 375* for 45 min. Serves 8-10
