Ingredients
- 18 frozen unsweetened mini tart shells
- 1/2 C roasted red bell peppers, drained and chopped
- 4 oz. soft, unripened goat cheese, chopped
- 3 eggs
- 1 C whipping (35%) cream
- 1/4 t salt
- 1/4 t black pepper

Preparation
Step 1
Preheat oven to 375 F. Place tart shells on a baking sheet. In a bowl, combine roasted peppers and goat cheese. Divide cheese mixture evenly among tart shells. In a bowl, beat eggs, whipping cream, salt and pepper. Pour into tart shells, filling just to the rim. Bake for 20 to 25 minutes or until puffy and set. The filling will fall as it cools.
Serve warm or at room temperature.
