EASY ROTELLE AND MUSHROOMS

Recipe from Joan B. She made this for Toby while he was going through chemo and radiation and couldn't eat much of anything except noodles. We loved this dish so much that she made this a second time at our request! Thanks, Joan! You and Jim have been a blessing to us over and beyond!!

Ingredients
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 TBS. butter or margarine
- 8 oz. mushrooms w/liquid
- 2 1/2 cups water
- 3 bouillon cubes (beef or chicken)
- 4 cups (8oz.) Rotelle, uncooked
- salt and pepper to taste
- 1/2 cup fresh parsley

Preparation
Step 1
Saute' onion and garlic in butter until tender, NOT brown.
Add mushrooms with liquid, water and boullion. Bring to a boil.
Stir in uncooked Rotelle and simmer for 15 minutes or until tender.
Add salt, pepper and fresh parsley.
