YUM-YUM CAKE

This recipe isn't in any of the R.O.D.E. cookbooks.

The first time I tried this recipe was in May, 1981, when we were visiting Mom and Dad in KY. It was the new, all-the-rage recipe. When I came home, I made the cake... and ate it all myself. GOT SICK! :-0. Then I found out I was pregnant.... Strangely enough, I only craved raw veggies and crushed ice! Guess he got his sugar fill in one Yum-Yum dose!!

Ingredients

  • st LAYER:
  • 1 box yellow cake mix
  • 1 egg, beaten
  • 1 stick butter, melted
  • nd LAYER:
  • 1 - 8 oz. pkg. cream cheese
  • 1 box confectioner's sugar
  • 2 eggs, beaten

Preparation

Step 1

Mix cake mix, butter and 1 egg together. Mixture will be doughy. Press into 8"x13" greased and floured pan.

In the same bowl, mix cream cheese, 2 eggs and confectioners sugar - retain enough sugar to sprinkle on top.

Pour into pan on top of 1st layer.

Bake @ 350F for 30 minutes. While hot, sprinkle remaining sugar over top. Let cool. Cut into squares.
