Ingredients
- 1/2 cup butter -- melted
- 3 tablespoons unsweetened cocoa powder
- 1 cup sugar
- 2 eggs -- well-beaten
- 3 tablespoons flour
- 1/2 teaspoon vanilla
- 1 cup chopped pecans -- (optional)
- 1/2 teaspoon instant coffee, to taste -- or up to 1 1/2 tsp

Grease 6 six-ounce ramekins; set aside. In a medium mixing bowl, stir
together butter, cocoa powder and coffee till well combined. Stir in
sugar, eggs, flour, and vanilla. Stir in nuts. Place custard cups in
large roasing pan or baking dish. Divide pudding mixture evenly among the
prepared ramekins. Place pan on oven rack; pour hot water into the large
pan to a depth of about 1 inch.
Bake in 325 degree oven for 45 minutes or untill pudding is crusty on top
and soft inside. Serve pudding warm, or cooled with whipped cream.
