Ingredients

  • 7 pounds green tomatoes - sliced with skin on.
  • 3 cups lime
  • 2 gallons water
  • 5 pounds sugar
  • 3 pints white vinegar
  • 1 teaspoon cloves
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon celery seed
  • 1 teaspoon mace
  • 1 teaspoon cinnamon

Preparation

Step 1

Make 2 gallons of lime water - Add 3 cups of lime to 2 gallons of water. Stir until dissolved.

Add the 7 pounds of sliced green tomatoes to the lime water. Allow to soak for 24 hours.

Drain from lime water. Put in 2 gallons of clean, cold, plain water. Leave for 1 hour. Drain. Repeat this step 4 times.

During last hour of rinse, make the following syrup.

Combine sugar, vinegar and all of the spices. Bring to a boil. Pour over the drained tomatoes and allow to stand over night.

The next morning, bring the tomatoes & syrup to a boil. Allo to simmer for 1 hour.

Pour in sterilized jars and seal.
