Garlic Spinach

Ingredients
- 2 garlic cloves
- 1 tsp lemon grass
- 2 lbs fresh spinach
- 2 T peanut oil
- salt
- 1 T dark soy sauce
- 2 tsp brown sugar

Preparation
Step 1
Peel garlic and crush in a pestle and mortar. Set aside.
Using a sharp knife, finely chop the lemon grass. Set aside.
Carefully remove the stems from spinach. Rinse leaves and drain thoroughly, pattin gdry with paper towels.
Heat peanut oil in a preheated wok or large skillet until it is almost smoking.
Reduce the heat slightly, add garlic and lemon gras and stir-fry for 30 seconds.
Add spinach leaves and a pinch of salt to skillet and stir-fry for 2-3 minutes or until leaves have just wilted.
Stir soy sauce and brown sugar into mixture in wok and cook for 3-4 minutes more.
Transfer the garlic spinach to a warm serving dish and serve as an accompaniment to a main dish.
