Ingredients

  • 4 medium zucchini
  • 3/4 cups carrots - shredded
  • 1/2 cups onions - chopped
  • 6 tablespoons butter
  • 2 1/4 cups herbed croutons
  • 1 can cream of chicken soup
  • 1/2 cups sour cream

Preparation

Step 1

Slice zucchini and steam until tender. Drain.

In a sauce pan melt 4 tablespoons of butter. Cook onions & carrots in melted butter until tender.

Remove from heat & stir in 1 1/2 cups of croutons, soup & sour cream.

Gently stir in zucchini.

Put into a casserole dish and refrigerate over night.

Bring to room temperature the day you plan to cook.

Melt 2 tablespoons of butter. Add remaining croutons to the melted butter. Put buttered croutons on top of the casserole.

Bake at 350 for 45 minutes - 1 hour.
