Basic Breaded Chicken Recipe

This process can be used with any chicken parts. For a crowd, the chicken can be browned the day before and finished off in the oven the next day.

Ingredients
- Chicken parts (If I'm using breasts, I cut them lengthwise into cutlet so they cook quickly, usually in the browning of them.)
- Dish of flour
- Beaten egg mixed a little water
- Mixture of 2/3 cup Progresso Italian bread crumbs and 2 tablespoons Kraft Parmesan cheese in the green jar.
- Oil to brown

Step 1
If you're using chicken that is 15% chicken broth, you probably don't need to salt and pepper. But, if you feel a need to, do so sparingly.
Dip chicken in flour and tap off the excess.
Dip chicken in egg and let drip a bit
Coat chicken with breadcrumb mixture.
Heat oil in a skillet and saute until browned.
Finish cooking in the oven. If using the next day, put in a casserole dish. Before reheating, place about a half can of canned chicken broth in the bottom of the pan to keep the chicken moist. Cover while reheating.
