Ingredients

  • 2/3 cups butter
  • 1/2 cup fine dry bread crumbs (Progresso Italian works well)
  • 2 tablespoons Parmesan cheese (Kraft in the green jar works best.)
  • 1/2 teaspoon garlic salt
  • 4 skinless, boneless chicken breast (You can also do this with any part of the chicken, skin and all.)
  • 1/4 cup chicken broth or white wine
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley

Preparation

Step 1

1. Preheat oven to 375 degrees.
2. Melt butter. Combine bread crumbs, cheese and salt.
3. Dip chicken in melted butter, then coat with crumb mixture. Reserve remaining butter.
4. Place chicken in an ungreased pan.
5. Bake for 30-50 minutes depending on what part of the chicken you are using.
Chicken will be brown and fork tender when done.
6. Meanwhile, add wine or broth, green onions and parsley to the reserved melted butter.
7. When chicken is done, pour butter sauce over chicken and continue baking for 3-5 minutes or until sauce is heated through.
8. Serve with sauce spooned over.
