Notes: dough does not have to be refrigerated, does need to rest a little after mixing. Baking times are approximate, do not overbake. If cookies are browning baked too long. Freezes well.
There is a lot of leavenor in recipe general rule is less leavener so they don't spread, can add flour if spreads too much, better to wait a day to frost.

Ingredients

  • 1 cup (two sticks) REAL unsalted butter softened
  • 1 1/2 cups confectioner's sugar
  • 1 egg
  • 2-3 tsp flavoring (almond, vanilla, etc)
  • 2 tsp baking powder
  • 1 tsp salt

Step 1

1. Cream together softened butter and confectioner's sugar. Crack the egg into a separate bowl, and add the flavoring. Use emulsions (extracts work too). Add that to the butter sugar mixture and mix until the egg is thoroughly incorporated. In a separate bowl, sift together the flour, baking powder and salt. Then add little by little to the mixture. Dough is ready when most of it sticks to the paddle, has a little give when touched, but does not stick to fingers.
2. Roll out on parchment to about 1/4 in thick, use flour for dusting as needed. Cut and bake at 400 degrees for 7-8 minutes.
Makes 2-2 1/2 dozen
